Blueberry Bake | Gluten-Free/Vegan
As with most recipes we put together at Trevor Rea Training, this blueberry bake is healthy, macronutrient friendly, and quick/easy to create! We believe healthy should taste good and who doesn’t love a good ol’ “dessert” that can, in reality, be eaten as a meal or nutritious snack?! There’s also a good chance you already have most of the ingredients so why not whip something amazing together the next time you’re craving something sweet.
In the Trevor Rea Training household, personally keep frozen blueberries on hand at ALL times, and oats, nut butter, and bananas are going to be staples in our pantry until the day we die. If you want a boost in protein, a clean protein powder would also be great in this bake as well (we stick to pretty basic dairy-free blends for the most part).
Our "go-to’s" for the basic ingredients:
Oats: We typically go with quick cook because they’re easiest to cook but rolled old-fashioned are be best for this recipe.
Nut Butter: Our all-time favorite nut butter is probably NutZo (a wildly expensive drool-worthy nut/seed blend) but more often than not we use a simple organic crunchy peanut or almond butter. The protein/flavor infused specialty spreads do not disappoint either but we try to focus more of our grocery budget on whole foods.
Shoutout Costco for jumbo-sized versions of all the basics!
The only “not so basic” part of this recipe is the final *Pro-tip suggestions. If you’re feeling extra fancy we highly recommend trying out a flavored, protein blended nut butter.
